TROPICAL ICE CREAM PIE

Crust Ingredients:
1 1/2 cups (about 10 cookies) macaroon cookie crumbs
1/4 cup butter or margarine, melted
Filling Ingredients:
1 quart vanilla ice cream, slightly softened
1/2 (12-ounce) container (about 3/4 cup) frozen pineapple, orange and banana juice concentrate, thawed
Topping Ingredients:
1 cup Whipped Heavy Cream
2 tablespoons powdered sugar
1 kiwifruit, peeled, halved, sliced
1 small star fruit, sliced
Combine cookie crumbs and butter in medium bowl; mix well. Press onto bottom and up sides of 9-inch pie plate.
Stir together ice cream and fruit juice in medium bowl until well mixed. Spoon into prepared crust. Cover; freeze until firm (6 hours or overnight).
Beat whipping cream in small bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir in powdered sugar. Decorate edge of pie with whipped cream. Garnish with kiwi and star fruit slices.

APRICOT GLAZED KABOBS

Yield: 6 servings
Kabobs Ingredients:
4 cups (cubed 1-inch) assorted fresh fruit and/or pound cake
6 (8-inch) wooden skewers, soaked in water
Sauce Ingredients:
2 tablespoons butter or margarine, melted
1/4 cup apricot preserves
1/2 teaspoon curry powder
Heat gas grill on medium or charcoal grill until coals are ash white. To assemble kabobs, alternately thread cubes of fruit and/or pound cake onto wooden skewers.
Stir together all sauce ingredients in small bowl. Brush sauce over kabobs. Place kabobs onto grill. Grill, turning and brushing with sauce occasionally, until heated through (6 to 10 minutes). Remove from grill; brush with remaining sauce.
TIP: Use fruits such as apples, pineapple, strawberries, oranges, bananas and/or melon balls.

BERRY TIME SHORTCAKE
Preparation time: 10 min Baking time: 25 min Cooling time: 30 min
Yield: 9 servings
1 1/4 cups all-purpose flour
3/4 cup sugar
2/3 cup milk
1/3 cup butter or margarine, softened
2 eggs
2 1/2 teaspoons baking powder
1 teaspoon vanilla
1/2 teaspoon salt
Strawberries
Heavy Whipping Cream, whipped, sweetened
Heat oven to 400°F. Combine all ingredients except strawberries and whipped cream in small bowl. Beat at medium speed, scraping bowl often, until well mixed. Spread into greased and floured 8 or 9-inch square baking pan.
Bake for 25 to 30 minutes or until lightly browned. Cool completely. Cut into squares.
Serve with strawberries and whipped cream.
Recipe Tip:
Prepare cake as directed. Cool completely. Cover with plastic food wrap to transport. Place strawberries and whipped cream in separate containers. Transport in cooler.
