Note: This recipe doesn't have any set amounts. Depends on how much you need and how carried away you get with the ingredients. I usually end up making more cornbread mix as I go. This is one of those "throw whatever you have into it" recipes.

INGREDIENTS:
Equal parts hamburger and sausage.
Cornbread mix: prepared and will need to double or triple the recipe
Diced potatoes (however much you like)
Shredded Cheese
1 large onion, diced
Any other veggies (such as peas, beans, or corn) that you like
Garlic, salt, and pepper to taste.
1 can diced tomatoes (drained) if desired.

Brown the hamburger and sausage with onion, garlic, salt, and pepper. Add a can of diced tomatoes if you like.

While the meat mixture is browning, prepare the cornbread mix per package or recipe instructions.
In a oiled, cast iron skillet, place enough cornbread mix to cover the bottom. Bake (per mix instructions) just long enough to set the mixture, but don't cook thoroughly.

When that is ready, take from the oven, pour the meat mixture on top, add potatoes, any other veggies, and cover with shredded cheese (use however much you like.) Cover with the remaining cornbread mix until all covered. Bake per conbread instructions.

ALTERNATIVELY: you can pre-cook the potatoes in with the meat mixture if you desire.
